Anarsa ki goli is a cherished traditional sweet preparation that has been passed down through generations in Bihar. In the old days, grandmothers would carefully soak the rice, grind it by hand, mix it with pure jaggery, and prepare these little dough balls with love and patience. Every step was done slowly and thoughtfully, because the secret of a perfect Anarsa lies in the time and care given to the dough.

Ingredients

  • 1 kg old raw rice
  • 700–800 g jaggery (grated)
  • 1 teaspoon fennel seeds (saunf), lightly crushed
  • ½ teaspoon cardamom powder (optional)
  • 3–4 tablespoons poppy seeds (khus khus) for coating
  • Ghee or oil for deep frying

Preparation Steps 

Step 1: Prepare the Rice Flour

  1. Wash the rice thoroughly.
  2. Soak the rice in water for 2–3 days, changing the water once every day.
  3. Drain the water and spread the rice on a clean cotton cloth for 30–45 minutes. Keep the rice slightly moist; do not dry it completely.
  4. Grind the rice into a fine powder and sieve it.

Step 2: Prepare the Anarsa Dough

  1. Mix the rice flour with grated jaggery.
  2. Add crushed fennel seeds and cardamom powder.
  3. Knead well to make a soft dough. Avoid adding water unless required.
  4. Cover and rest the dough for 12–24 hours.

Step 3: Make Anarsa Goli

  1. Knead the rested dough until smooth.
  2. Divide it into small lemon-sized balls.
  3. Coat one side with poppy seeds.
  4. Flatten gently into thick round discs.

Step 4: Fry the Anarsa

  1. Heat ghee or oil on medium-low flame.
  2. Fry the shaped Anarsa slowly until golden brown and cooked evenly.
  3. Remove and place on a paper towel to remove excess oil.
