Upma

Soft and moist Upma recipe for that perfect breakfast/snack that is not only filling, but also delicous!


Ingredients
  • 1 cup semolina/rava/suji
  • 4 cups water
  • 2 tablespoons oil
  • 3 tablespoons clarified butter/ghee
  • ¼ cup carrot (finely chopped)
  • 1 cup onion (finely chopped)
  • 1 green chilli (finely chopped)
  • 1 tablespoon fresh coriander (finely chopped)
  • 12-15 curry leaves
  • 2 tablespoons sugar
  • 1 tablespoon roasted chana dal
  • 1 tablespoon urad dal
  • 1 teaspoon salt
  • 1 teaspoon mustard seed
  • 1 teaspoon lemon juice

Steps In Making Upma
  • Place a pan over medium flame and roast the semolina for 3-4 minutes while stirring it continuously. Do not roast on high flame else it might burn immediately. Now keep in aside.
  • In another pan add ghee and oil and once it becomes hot add the mustard seeds, roasted chana dal and urad dal and roast for a minute till the mustard seeds start to pop and the colour of the dal becomes light brown.
  • Now add the chopped onions, curry leaves and green chillies and cook for 2-3 minutes, till the onions become soft and translucent.
  • Further add the chopped carrots and cook for another 2 minutes.
  • Now add the water, salt, sugar and bring it to a boil.
  • Once the water comes to a boil add the roasted semolina and mix well. Now cover it with a lid and let it simmer for 3-4 minutes on medium flame till the water is completely absorbed.
  • Lastly add some lemon juice and fresh coriander and mix again. Cover it with a lid and let it rest for 3-4 minutes before serving.
  • Serve hot with chutney or garam chai. Enjoy!

Recipe Notes
  • Measure the semolina and water from the same cup.
  • Always use 4 cups of water for 1 cup of semolina for soft and moist Upma. If you will reduce the quantity of water then it will become dry.
  • You can add any veggies of your choice like peas, beans, capsicum etc.
