White Sauce Pasta

Ingredients

For Pasta

  • 2 cups (200g) pasta
  • 4 cups water (to boil pasta)
  • ½ teaspoon salt
  • 1 tablespoon olive oil

To toss veggies

  • ¼ cup carrots (roughly chopped)
  • ¼ cup onions (diced)
  • ¼ cup capsicum (diced)
  • ¼ cup red bell peppers (diced)
  • ¼ cup yellow bell peppers (diced)
  • ½ teaspoon oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons olive oil

White sauce

  • 2 tablespoons refined flour/maida
  • 2 cups (500ml) milk
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 8-10 garlic cloves (finely chopped)
  • 1 teaspoon chili flakes
  • ½ teaspoon oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Steps In Making White Sauce Pasta

  1. In a pan add water and bring it to a boil. Now add salt and olive oil. Further, add the penne pasta and boil it on a medium flame for 12-14 minutes or until soft.
  2. To check if the pasta is perfectly cooked, cut it with a knife and it will easily cut.
  3. Take a sieve/colander and rinse the excess water. Now rinse with some cold water, this will stop the cooking process.
  4. To toss the veggies place a pan over medium flame and add the olive oil. Once it becomes hot, add the carrots and cook for a couple of minutes.
  5. Now add the rest of the veggies, onions, yellow and red bell peppers, and green capsicum and toss them for 2-3 minutes. Further add salt, black pepper powder, and oregano and mix well. Do not overcook the veggies.
  6. To make the white sauce, place another pan over a low flame and add butter and oil in it.
  7. Now add chopped garlic, chili flakes, and oregano. Toss the herbs and garlic in butter on low flame for 3-4 minutes till the garlic becomes little golden in color and turns aromatic.
  8. Now add the refined flour and saute for a couple of minutes on medium-low flame, once done the refined flour will become little fluffy.
  9. Now slowly and gradually add cold milk, while stirring it continuously. Further, add salt and black pepper and mix well.
  10. Keep stirring for 2-3 minutes till it becomes slightly thick and creamy. Do not overcook the sauce, as it will thicken after we will add the pasta.
  11. Now add the tossed veggies and the boiled pasta and mix until well combined.
  12. Let it simmer for 2-3 minutes on low-medium flame.
  13. Transfer on a serving plate and sprinkle some chili flakes and oregano and serve hot!


Recipe Notes

  • Always cook the garlic and herbs on low flame for extra flavor, else they might burn.
  • While making the white sauce always add cold milk, else it will form lumps.
  • Do not overcook the white sauce else, after adding the pasta it will become thicker and won’t remain saucy anymore.
  • You can add any veggies of your choice, like baby corn, sweet corn, zucchini, broccoli.
  • After adding the pasta if the sauce has thickened a lot then add few tablespoons of hot milk or water and cook for 2 minutes.
